I worked on my cheesecake recipe and tested again. Now have the simplest way to make it and  in smaller sizes...

 

5 Minute Home Made CheeseCake for 1-2

 

Step #1 CRUST

Put the following in your blender or food processer:



  • 1/2 pack or 4-5 full size graham crackers -

  • 2-3 TBS sugar [white or brown]

  • 2-3 TBS margarine or butter


Blend til crumbly and mixed

Using a small cake pan, line with wax paper [or butter the pan] but wax paper is easier for removing later.

Press lightly into small cake pan [ or use 4-6 cupcake holders] let some bowl up the sides a bit. 

This doesn't have to be tight - loose press is fine, just make it even and set it aside.

 

 

Step #2 FILLING

1- Using a blender or food processor add in the following ingredients:



  • 2 medium sized eggs

  • 1/2 tsp lemon juice

  • 1/2 tsp vanilla

  • 1/2 TBS  flour

  • 1/4 pt  [4 oz] heavy  whipping cream

  • 1/3 cup sugar


Turn on and let it all blend together nice and creamy thick.

2- ADD CREAM CHEESE to blended ingredients : 

 1 - 8oz bar of room temp cream cheese 

CUT up the cream cheese into small slices and add to mixture~

BLEND FOR A MIN OR SO TIL  ITS ALL MIXES  thoroughly

[ TEST WITH A FORK TO MAKE SURE ALL CHEESE LUMPS ARE BLENDED]

 

Step #3 BAKE

Pour mixture on top of crumbs

Place #1 pan to sit inside a larger #2pan 

Add enough water into #2 pan  [ called a water bath] to reach about 1/2 way up on #1 pan

[this will steam and help cook cheesecake and prevents cracking]. 

Just be sure the water doesn't reach the level of the pan holding the cheesecake ingredients.

Bake on center rack,.

Bake at 350 degrees for 1 hour

Turn off oven, leave cake in oven with door CLOSED til thoroughly cooled to room temp [ about 1 hour]

 

Step #4 COOL  & EAT

Remove Pan#1 from Pan#2 

Place wax paper or aluminum foil over Pan#1

Place in Refrigerator for 4+ hours [ preferably overnight as this tastes better on Day 2]

Slice  & serve cold with whip cream,fruit sauce or melted chocolate drizzle.

 

Prep time less than 5 mins~!

only difference is the sugar- 

For a medium size cake  [ 2 x 8 oz cream cheese  use 3/4 cup sugar 4 med eggs& multiply other ingredients x2]

For a large size cake [ 4 x 8 oz cream cheese use 1 1/2 cups sugar 8 med eggs & multiply other ingredients x 4]
